Recipe: Mediterranean Chicken
Ingredients
3 Chicken Breasts
1/4 Cup of Olive Oil
1-2 Cloves of Garlic
2 Cups of prepared Farro or other rice-sized grain
1 Cup Greek Olives, Pitted
1 Cup of Artichoke Hearts
3/4 Cup of Sun-Dried Tomatoes
1/2 Cup Crumbled Feta
1/4 Cup Parmesan
1/5 Cup of Italian Salad Dressing
Instructions
1. Heat oven to 350 degrees
2. Prepare Farro or other rice sized grain as directed on package.
3. Heat olive oil in a large pan
4. Mince Garlic and brown in the pan
5. Cut Chicken Breasts into small pieces (1 inch or smaller cubes) and cook in pan with olive oil and garlic.
6. Slice Olives, Artichoke Hearts and Sun-dried Tomatoes.
7. Remove pan from heat and mix in all remaining ingredients.
8. Stir until completely combined.
9. Pour into a baking pan ( 8x8 or 9x9)
10. Sprinkle with extra Feta or Parmesan if you like.
11. Cook uncovered for 30 minutes.
