Recipe: Zucchini-Bacon Fritters

Ingredients:

6 slices thick-cut bacon or 10 to 12 slices of thinner bacon
1/2 cup cornmeal
1/2 teaspoon baking powder
1/2 teaspoon salt
Freshly ground black pepper
1 medium zucchini, grated
2 scallions, chopped, including 1 inch of the green parts
1 egg, lightly beaten
1 1/2 tablespoons pure maple syrup

Instructions:

1. Cook the bacon until crisp. You can do this in a skillet on the stove top. Alternatively, lay it on a baking sheet and bake in the oven at 350 degrees for a bout 15 minutes, until browned and crisp. Alternatively again, you can sandwich the strips between paper towels on a plate and microwave for about 5 minutes.

2. Combine the cornmeal, baking powder, salt and generous grind of black pepper in a bowl and mix well. Crumble the bacon into the bowl, then stir in the zucchini, scallions, egg and maple syrup. Mix to combine. The mixture might not seem like it will hold together, but it will.

3. Spray a large skillet with cooking spray and heat over medium heat. Spoon the batter into the skillet about 1 tablespoon at a time. Flatten each spoonful of batter slightly with the back of the spoon. Cook for about 2 minutes per side, until golden and cooked through.

Serves 6 (makes 10-12 small fritters)
